Typical, struggled for 20 mins for solution.
Then 1 minute after posting question I discovered the method.

OK I see how I can edit the mfr number - but how to edit the manufacturer?

In MiniMRP a Manufacturer is also a supplier.
So if you want to edit a supplier's or a manufacturer's name or something specific to that company/contact and not related to any specific item you do that via the 'contacts' menu.
if you want to edit something like manufacturer part number then you do that via the Item Detail (Components menu, select the component and go to that item's supplier box where you can edit the supplier's or manufacturer's part number.
If you want to change to a different manufacturer you also do that in the Item Detail tab. You can create a new supplier relationship if necessary then 'Right Click' that supplier's name, or any other supplier's name, and select the manufacturer [MFR] option to make that supplier into the manufacturer of that item.
