Under Assemblies after importing a CSV file is there a way of customizing your columns by creating an additional column if required?

If you already have the additional data in additional columns in a CSV then you can import that via the "Inventory" menu (not assembies menu) "Inventory Import CSV". Even though the items already exist in your inventory you can still import additional columns that were not imported the first time. Just check the box at the bottom of the window that says "If already exists then update selected columns"

If you do not have the extra columns in a CSV and just need extra columns where you can add data later then select an item, open the option the View/Edit the item. select the "CustomFields" tab and give names to one or more of the customcolumns. You only need to create the additional fields on one item and they appear (empty) in all items ready for you to enter new data..

I'm able to import an additional column via the Inventory menu. My interest is to customize the assembly menu and have both My Part Number in one column and Manufactures Part Number in another column.

When looking at the Assembly Parts list or BOM you see a menu button near the top of the program window (The little button with the 3 horizontal bars) Click that and select the option to "Show/Hide" columns.

You will see that you can show supplier, supplier's part number, manufacturer manufacturer parts number and a few other columns.

I have a customer who regulary asks for what stock I have on hand for various assemblies.
Is there any way to bring up an Assembly and have a column that shows stock on hand for each item in the Assembly?

As explained above. Click the menu button and select the option to 'Show/Hide' columns. You can enable the column to show OnHand quantities.
