Is there a way to review sales for assemblies? The only way I can figure out is by exporting every customer order to a csv file then copy and paste to a master spreadsheet. Not very efficient.

Look in the menu > Reports > Customer
In there you have reports for orders in given period. Deliveries/shipments in given period, invoices in given period.
I suppose if you sell assemblies and 'other' things then those reports won't tell you how many 'other' things you sold. Just the customer orders/shipped/invoiced.
